Roasted Herb and Garlic Butternut Squash

Might as well keep running with the Thanksgiving themed recipes to get everyone prepped for the big day! Here is another easy way to make a healthy alternative side dish that is sure to please paleo and non-paleo people alike. Plus, it has tons of garlic. Anyone (sans vampires) should be able to enjoy this dish. I usually despise squash for some reason, but I can shovel this garlic butternut squash down all day long.

Pretty simple herb and garlic butternut squash! Now you can bring something to the Thanksgiving table without seeming needy and too weird to your in-laws who don’t get what healthy means.

Here’s how to make it:

Serves: 4

INGREDIENTS

  • 1 butternut squash
  • 1 head garlic
  • sprig rosemary
  • 1 sprig thyme
  • 2 tablespoons avocado oil
  • salt and pepper to taste

INSTRUCTIONS

  1. Cut in half and scrape out seeds. Cut off skin and chop into bite sized cubes.
  2. This step is easier if you get the pre-peeled garlic from your grocery store. Otherwise, just man up and peel and chop the whole head of garlic. Pull the herbs off of the stem. Add to squash and toss in glass baking dish.
  3. Bake at 400 F for roughly 45-55 minutes. Stir halfway. Take out just as edges are starting to char (see picture).
