Ah, the paleo pancake. Quite an odd invention. Typically, no breakfast works for me. When I do want breakfast it is an extravagant brunch, but I guess every now and then you want some basics. Coffee. Pancakes. Football. When eating an entire bag of trail mix, I thought – hmm, wouldn’t this be delicious in a pancake form? The answer is, yes, it is.
Yeah, yeah, this is another paleo police risking post because there are some chocolate chips in a paleo pancake, but guess what – the internet isn’t paleo. So if you are looking at this and are annoyed about paleo or not paleo, go away. If you’re into eating chocolate chips and you want to hang around, then read on!
Trail mix + pancake = paleo pancake. Pretty easy equation there. Enjoy!
Here’s how to make it:

Serves: 4
INGREDIENTS
- 4 pastured eggs
- 1 cup almond flour
- 1/2 cup tapioca flour
- 1 teaspoon vanilla
- 1 teaspoon coconut oil
- cup coconut flakes
- cup dark chocolate chips
- cup raw pumpkin seeds
- cup crushed walnuts
INSTRUCTIONS
- Whip up eggs, almond flour, tapioca flour, vanilla and coconut oil. Use blender, fork or hand mixer.
- Use the recommended ingredients of coconut flakes, chocolate chips, pumpkin seeds and crushed walnuts or whatever type of trail mix you think tastes good! Up to you.
- Use large, flat pan on medium heat to cook up pancakes until they are golden brown on each side. Top with more trail mix.
